Put oil in the pan, cut onion, celery, carrot and all the herbs tied in a bunch. It must all be fried at a very low temperature. Add the minced meat, add salt and pepper, cook the minced meat very well, almost to the point of sticking to the pan. Add good red wine and let it absorb completely, at this point add the peeled tomatoes and some vegetable broth. Let it cook on a low heat for about an hour, stirring occasionally.
